Article: Hot chocolate a better Valentine’s choice

Amplifyd from www.upi.com

“Research suggests that drinking a cup of dark hot chocolate can be equated with drinking a glass of wine in protecting the heart,” Lona Sandon, a registered dietitian at the University of Texas Southwestern Medical Center in Dallas, says in a statement.

Pure chocolate, made from cocoa beans, is rich in flavanol, an anti-oxidant that may help protect arteries from damage, maintain healthy blood flow and fend off heart disease, Sandon says.

Belcolade introduces chocolate food pairing

Belcolade has created a new guide to introduce chocolate foodpairing that identifies which foods combine best with its Collection range of origin chocolates. It is presented both as a printed brochure and as an interactive website for visitors to use as a creative tool for recipe development.
Designed for chocolatiers, artisan and industrial bakers, patisseries, and restaurant chefs, the guide is intended to inspire creativity. It explains how each of the distinct origin chocolates in the Collection range can be paired with a variety of different foods - even the seemingly unpairable.
Following the principles established by foodpairing pioneer Heston Blumenthal, the flavour profile of each chocolate has been analysed at a molecular level. Each profile has then been compared against a database of several hundred other foods and beverages (including fruits, vegetables, beans, dairy products, meats, and fish), and matched with those that share the same major flavour components. Study: Women Scrimp More In Down Economy

During the recession, women have become more frugal than men, a study finds.

An Empathica, Inc. survey of 7,200 U.S. consumers shows that while overall spending was down — only five percent of survey participants purchased more in 2009 compared to 2008 — 72 percent of women say they significantly cut spending compared with 62 percent of men.

Supermarkets and gas stations were reported to be the least affected by consumer frugality.

The survey also found 57 percent of participants are optimistic about the economy, with one in three anticipating their financial situation will improve in the next six months.

Ecomec claims hike in demand for used confectionery equipment

Carl Weaver says:

Interesting - This is the “improvise” part of my life’s survival plan of “improvise, adapt, overcome.”

Amplifyd from www.confectionerynews.com
<div class=”warning”>You must have JavaScript enabled.</div>

The second hand confectionery equipment market is buoyant, with strong demand noted in the past 12 months, reports used machinery supplier Ecomec, who added that lack of access to credit within the industry is a predominant factor for the sales hike.

Confectionerynews.com spoke with Greg Meredith, managing director Ecomec UK, at the industry trade show Pro Sweets, and he said that confectionery makers with surplus equipment are now keen to sell rather than keep it in storage as they need to generate cash in a restrictive credit lending environment.

He said confectionery makers are also realising the advantages the purchasing of second hand stock can give them in that they can get a quality machine at a fraction of the new price and within a quicker delivery timeframe than with new machinery.
